Physicochemical parameters of Blighia sapida (K.D. Koenig) oil extracted in Togo

Oils extracted from Blighia sapida fruits are usually consumed without any information on its chemical composition. However the bad quality of oil can be a source toxicity. Thus, aim this study is to investigate physicochemical B. Togolese flora. To reach goal study, mature and immature arils were used for extraction by solvent method using hexane. The parameters including density, acid value, saponification ester iodine value impurity content determined according French Association Standardization (AFNOR) standards. results yields 41.7% (immature arils) 48.8% (mature arils). had (7.013 mg KOH/g), (195.17 (87 g I2/100 g) (188.157 KOH/g) values different those arils’ which 30.86 KOH/g (acid value), 191.68 (saponification 85 (iodine value) 160.82 (ester value). densities 0.916 g/cm3 (mature) 0.77 (immature) while was 3.4% 16.1% (immature). effect heating oils resulted in very high parameters. obtained deduce that meets Codex Alimentarius standard.
